I haven't posted since Tuesday and for that I am sorry. But since I barely worked last week I wasn't making much money, which means I couldn't afford to do anything but sit around my apartment, which means I've had absolutely nothing interesting to write about, unless you wanted to hear about all the daytime television I've watched...I didn't think so.
I wrote a few versions of this post and finally decided that I didn't want my first post in a week to be so whiny. So instead of going on about how boring and pointless last week really was I am going to be positive and focus on the things I actually did!
1. Watched The Bachelor and texted with my mom during the whole thing.
2. Went to dinner with the girls from my old young life team.
3. Hung out with my sister and went to dinner with her and her roommates.
4. Got to meet some of the new awesome new "babies" in my sorority.
5. Hung out at the fraternity house with Peter like old times.
6. It was 72 degrees and sunny over the weekend (I know that's not something I really did... but it was wonderful and I had to mention it)
So even though that's all I did last week, they are 6 simply great things and when listed out like that they make last week seem less dull. Isn't it so much nicer to focus on the good rather than harp on about the bad?

I recently created a linkedin profile. I wasn't quite sure what the point of it was or how to use it and while I'm still figuring it out I do know that it has something to do with making professional connections. My hope is that it will help me link up with some potential employers... fingers crossed.

Yes. Very much. I also like that I don't have any friends with the same name, it makes it more special. When I was in kindergarten there were about 4 girls named Shannon in just my class. Since then I've pretty much been the only one I know.
2. How do you define success?
Mom, can you make easier questions please? I've had a lot of little successes but I'm so sure I feel "successful" yet.
3. Wheel of Fortune or Jeopardy?
Well I LOVE both but Jeopardy is harder to play along with (and can sometimes make me feel dumb) so I prefer Wheel of Fortune.
4. If you could own any single object that you don't have now, what object would that be?

Definitely nay. Never been a fan. I haven't had it in a while so maybe if I try it again my tastes will have changed but... eh.
7. Which is more admirable- the ability to organize and be methodical or the ability to adapt and make do?
My answer may be kind of a cop out but I think it's important to have a healthy balance between the two. There is no point in being a super great planner and organizer because life is full of unknowns and you have to be able to handle the stuff that you can't plan for.
8. Remember my couch-bed from my Home Tour posts? Remember how I asked for a new daybed cover from pottery barn for Christmas? Well... guess what came in the mail yesterday?! Couch Bed is now perfectly adorable!! I think it changes the whole feel of the space. Much more complete and cozy.
Now I just need something on the wall above it.

I haven't blogged in a while because I've been busy slipping and sliding around town in the snow. Plus I feel like every blogger in the South wrote about the "snowmaggedon" so I didn't think I had anything new to contribute. Here are a few fun things that I would like to share though:
First of all Facebook finally forced me to change to the new profile? How do you all feel about this? I resisted for as long as I could.
Peter got me a popcorn maker for Christmas and it was delivered to me today! I was a little annoyed because we said we were not going to exchange gifts-that we would rather plan a fun weekend away or a great night out. However I didn't complain that much because popcorn is my favorite! It's flavored popcorn maker so he also got me some kernels and white cheddar seasoning (white cheddar popcorn is my ultimate favorite- I have such a great boyfriend!!
This weekend I am looking forward to getting out of the house. Peter and I are planning on going to the Biltmore. I've never been and Asheville is only an hour away so it will be a fun, quick little trip. I'm excited!
We will be back in time on Saturday so that I can watch Miss America that night! It is on Saturday, January 15th on ABC at 9:00 pm! I'd like to watch it with my mom and my sister and pick out my favorite girls. Unfortunately mom lives in NJ so I'll settle for just the sister and texting back and forth with mom.

I have been closely watching the radar and the onimous icy blue wave that's coming our way. 60 nearby schools have already called it quits. The grocery store looks like a bomb went off and took all the water, and bread with it. We've bought some firewood and brought out the blankets and flashlights, and stocked up on hot choclate. We are ready for that crazy carolina snow storm. It should be hitting any hour now.
We may seem overly cautious and a little premature with all our angst but the thing is... there is like one salt truck and maybe 2 plows for the entire state so if we get even a flurry we're stuck!
I can't wait! I plan on snuggling down in bed and sleeping in, going absolutely no where except maybe for a walk/sledding in (hopefully) the winter wonderland.

Hey la, hey la my boyfriend's back!
That's right! I picked up my honey from the train station at the god awful time of 5 am this morning. He offered to take a taxi but I have a thing for reunions. So I went to bed early-ish last night, woke up earlier than I have since I graduated, put on make up and non-scrubby clothes- you have to look cute when you haven't seen each other in a month (even though he's been on a train all night long and really doesn't care, he's just happy you're there).
Now he gets to sleep away the day and I get to be tired at work and I am going to be singing that song all day now!

I was craving PW's Sesame Noodles last night so I made them and I made and an Asian Cabbage Salad to go along with them. I made the full recipe for the salad dressing and the noodle sauce so I could save them for later meals (they make a lot!)
Here's the recipe for this yummy salad:
- Cabbage. I just bought a bag of shredded cabbage because I'm lazy but the best option is to buy a head of Napa Cabbage.
- A bag of broccoli slaw
- Sugar snap peas. (These are optional - you don't have to include them or you could use any veggie you want. Broccoli would be a good option)
- Chicken Ramen. (Set aside seasoning packet for dressing.)
- Almond slivers.
- Green onion
- Mandarin oranges
Combine the above ingredients and toss with salad dressing below:
- 1/2 cup vegetable oil
- 3 T red wine vinegar (can substitute with rice vinegar)
- Soy Sauce
- Sesame oil (about 1/2 T- a little goes a long way)
- a little salt and pepper
- Sesame seeds
- 2 T white sugar
In a saucepan over medium heat combine vinegar and sugar until dissolved. Remove from heat and stir in seasoning packet from Ramen noodles (above). Add a little oil, a soy sauce and the sesame oil. Taste test. Add more if needed. Toss over salad below, top with sesame seeds. Let chill and enjoy!

2. If fear were not an issue what is something you'd like to try?
Definitely skydiving. I also always feel the adventurous streak when I read things in National geographic like "the worl'ds largest cave found in Vietnam."
3. What do you add to your coffee or tea?
Depends. I drink my coffee like I drink my English tea or Earl Gray with milk and sugar.
4. What historical sporting event would you like to witness?
I would like to go to the Winter Olympics- I think the ski jump is soo crazy to watch!

5. What is one piece of advice you would like to give your 16 year old self?
Stop parting your hair in the middle! Or something more profound like- "hey, you're wasting time being unhappy! Stop complaining about England because you're going to miss this!"
(fortunately I did get over the move overseas in time to be thankful for the opportunities)
6. Are you a planner or do you prefer to fly by the seat of your pants?
I would like to say that I can just fly by the seat of my pants but I am a big time planner. I like to think ahead-way ahead. I like to know what's happening next. This is not conducive to this time in my life when I find myself in limbo between college student and settled. One of my goals this year is to try and let go of some of my plans and make room for God's plans to unfold!
7. What is one thing you are looking forward to in 2011?
I can't pick one. I just know this is going to be a great year. I am willing it to be amazing!
8. Fess up- who watched The Bachelor on Monday? What's the deal with the girl with fangs?! Writing that sentence makes me almost too embarrassed to watch this season...almost.

I slept in until 11.
Then I laid in bed and watched Say Yes to the Dress for a little.
Then I felt really lazy and hungry.
So I dragged my but out of bed with a craving for Five Guys, got my swimsuit out of the bottom of my closet, laid it on my bed and stared at it....
It was a test of wills. I contemplated the pros and cons of actually donning the suit, going to the pool and swimming laps. I thought about wet hair and cold water and a raised heart rate.
But the suit just laid there staring back, taunting me and my real secret plans to eat a big cheese burger and watch The Notebook.
Well.... I lost.
I had a yogurt and argued the whole way to the pool. I resisted the uncomfortable goggles and thought that maybe since I couldn't find my nose plugs I could get out of it. But no such luck. I lost and the suit won. My tired and water logged body is ignoring the suit now. In revolt I will still have Five Guys for dinner and watch The Notebook (guilt free).

I am going to purge my apartment of crap.
It's the new year, it's time to get organized!
My target spots:
- My pantry (this one is the scariest)
- My fridge.
- The magazine basket by my couch.
- My laundry basket-I want it allll done!
- My desk as well as the drawers underneath it and the cute little stool where I've hidden stuff I don't know what to do with inside.
- My jewelry- currently a tangled mess of necklaces and mis-matched earrings.
- My closet and dresser. I want to get rid of clothes that I don't wear anymore and the ones that don't fit.
- This includes t-shirts. Over four years of college I have accumulated A LOT of t-shirts from sorority and fraternity functions and young life shenanigans. I want to make a t-shirt blanket and throw away the ones that I don't like.
Wish me luck... I'm going in!

Hey girls! This year I am going to participate in Living Proof Ministries' "Siesta Scripture Memory" challenge. Over the course of the year I will (attempt) to memorize, and commit to heart, 24 scripture verses.
The challenge is to select 24 verses, two a month, that mean something to you, that you feel led to remember. On the 1st and 15th of each month you post your verse (along with the reference and the translation) on LPM's blog. Then in January 2012, my mom and I are going to the Siesta Scripture Celebration together!! I am going to share my verses on my blog. I think it will help me remember them if I see them on my sidebar.

For me this is going to be a challenge in self discipline, and a challenge to actually remember to post a verse each time. Learning scripture and being able to call upon it, is something I desperately need. I am going to select verses that will hopefully teach me to let go of my worries, my fears and the uncertainty I feel about the future. I'm praying that God leads me to verses that help me let go and get out of my own way to see God working in my life. But I know that anytime spent reading the bible and studying His word can only bless my life (even if I don't memorize 24 verses.)

Yes it is 2011! Yes today is the 1 year birthday of Sincerely Shannon!
I don't know which is bigger news?!
Today I am just going to share some highlights from this year of blogging. It has been so fun!To take you back here is a snippet from my very first post. This is why I decided to start a blog in the first place:
Since this is my last year of formal education (insert huge sigh of relief), a TON of new things are coming my way: graduation, job (we hope), apartment, responsibilities, and the great unknown! I don’t want to forget a minute of this exciting time so I’m going to record and share and use this blog to keep family, friends and future followers (again, I’m being hopeful) in the loop. Join me in the ups and downs that come with leaving the college bubble!
Let me address a couple of things in that little excerpt:
I had a fabulous last semester of college (LDOC). I did manage to graduate (Let the Commencement Commence). I got a full time job (Grown Up Girl Job). I started paying my own rent and utilities for my apartment (Home Tour). Did I mention the new responsibilites and the unknowns (Why, Hello There)?
Here are some posts from this year that I'd like to highlight:
a) Shannon Elizabeth Designs- I started my own custom blog creation and graphic design "shop."
b) Cooler Painting: A Detailed Guide was my most viewed post...weird.
c) My Flashback to England post is my personal favorite!

Basically this year flew by! I've enjoyed looking back over my blog's short history (sorry if no one else cares). This year has definitely had it's ups and downs and I'm glad I have my blog to help me remember it all!
